Winter is their bulking phase while spring becomes the cutting phase (have to get ready for those speedos and bikinis! ) and summer is maintenance. Most people I know who do these, do them according to season. You typically create a calorie deficit during this period to help with the fat loss, you maintain your workout and add some cardio in to help shed the fat. The "cutting phase" is when you want to shed the extra bodyfat that you gained during the "bulking phase", off while maintaining the muscle mass you built during that phase. Cardio is usually kept to a bare minimum if none at all. Most people do gain some amount of fat during this period but it is possible to keep it to a minimum. These are the basics start with them and adjust accordingly depending on how your body reacts to supplements, training, diet etc. The "bulking phase" generally is defined as a period where the amount of calories taken in is increased to help put on the extra muscle from intense workouts. Remeber to eat 18-22 (if you put on weight easily x 18 otherwise x 22)x your bodyweight when bulking split over 5-6 meals and when cutting gardually reduce to 10 x your bodyweight split over 5-6 meals. this is where the cutting and bulking "phases" come in. As your body gets used to working out, it becomes more efficient at doing one or the other. When you first start off doing weights/cardio, for the first ~6months, you can lose bodyfat and gain muscle mass with ease compared to later on. I'll take a shot at explaining this as best as I can.
